A party without a cake is just a meeting…


The holiday countdown has officially begun. I’ve been enjoying beautiful days lately, even if the last days of school make me feel quite a bit nostalgic. Another school year has gone by and as a mother sometimes I wish I could stop the time… but let’s put that apart… With so many parties and events I’ve been baking and cooking like there was no tomorrow from buttermilk scones to spanish tortilla, there was something for all tastes. One of my creations was this mascarpone lemon cake.  I think there’s something magic in layer cakes. They evoke so many emotions,  they bring joy and a touch of glamour to every party, not to mention the memorable and lovely moments you can spend with your little ones in the kitchen!  Every single time I bake one,  Julia Child’s quote comes always to my mind,  because I agree completely with her words. I dare to say that even an ordinary day can turn into a very special one by baking a proper cake.  By the way you have surely noticed by now that I love lemons and mascarpone… well I’m beginning to think I need a hashtag #ihaveathingwithlemonandmascarpone because I truly cannot miss these two ingredients in my kitchen. They remind me of  a cake I have to eat every time I visit Positano. There’s a caffè with the same name, where I always have to stop by when coming from the beach,  because they make one of the best Torta al Limone ever! It’s a caffè for tourists -don’t expect an insider tip!- but the cake is really worth a try!

I found a recipe on Bon Appetit Magazine and made the best of it. Even if it’s different from that cake, this lemon mascarpone layer cake brings these two fabulous ingredients in perfect harmony together, not to speak about the summer memories it evokes!
